Simply Dense Cheesecake

So, I have to admit that I hate going to a food blog and finding there is a ten page description of the blogger’s life before the recipe. When searching for recipes, I want the recipe with little to no text at all. So I will do my best not to go on and on. My only word of advice is that this is a very DENSE cheesecake.

Ingredients:

  • 3 bricks of cream cheese

  • 3 large eggs

  • 1 cup of sugar (if using powdered sugar substitute use 1.5 to 1.75 cups)

  • 1 teaspoon vanilla extract

  • 1 box of Oreos

  • 2 tablespoons of melted butter

Directions:

  • Preheat the oven to 350 degrees Fahrenheit.

  • In a large mixer, I use my KitchenAid Professional 5 Plus, add the cream cheese and mix until it starts to look smooth.

  • Incorporate the eggs one at a time, to ensure they are fully mixed in.

  • Add in the sugar and vanilla extract and continue to mix. I mix for at least 5 more minutes after fully incorporated to ensure a smooth fluffy batter, remember to pause after the addition to scrape down the sides and the paddle. This will ensure a lump free filling.

  • While this is mixing I put at least two full rows of Oreos into my food processor and pulverize until it looks like sand. I don’t remove the cream from the cookies.

  • Dump the cookie crumbs into the bottom of the pie pan or springform pan and add the melted butter. I mix and then press the crust into the pan. Make sure to come up the edges a bit, if you need more Oreos you can add more to the blender and then just add to the mixture. Use your hands to press the crust down properly.

  • Bake the crust for about 10 minutes on its own.

  • Pull the pan from the oven and add the filling. Please note if you are using a smaller pie pan you may need to make two crusts as there is a lot of filling.

  • Place in the oven for about 45 minutes to an hour. The cake will crack as there is no water bath for this version, and the outsides will brown up nicely. It is ok for the middle to be a little jiggly when you remove it, just make sure the edges look more solid.

  • My recommendation here is to cool fully, it takes about an hour or two, and then refrigerate for a minimum of one hour. Although my husband is impatient and it doesn’t always make it to the fridge without a piece missing.

  • If you don’t like the way it looks, because it can crack without the water bath, I suggest adding any toppings before you place it in the fridge to finish cooling.

  • Cut and enjoy! Remember it is dense so it’s ok to cut smaller pieces.
